The box is a little over planted. But the Beets are coming out this weekend, and the kale will be trimmed. (we trim the kale twice a week for dinner) The beet greens will be sauteed with olive oil, butter, garlic for dinner tonight. The 3 cucumber plants require daily training to keep them growing over the edge. I am about 10 days from harvesting cucumbers. In 20 days I will be overwhelmed.
Many of the greens for vegetables are edible: broccoli leaves, radish greens, beets. Even carrot greens can be put in blended drinks or used to make pesto. All you have to do is google: Can you eat ________ greens?
