If there is a new attachment head that doesnt use existing pin communication how can we use one of the unused wires? Say the pink and blue ones are not being used how do we configure them?

The Universal Tool Mount cable pinout is documented at Genesis v1.8 UTM cable pinout
All the wires in that cable appear at the Farmduino and can be patched to various I/O pins visible to the MCU. After that it’s up to you whether to integrate that sensor by writing Custom firmware for the Farmduino or handling that device as a side-car (also documented in the extensive FarmBot online docs).
